Easy DIY Tailgate Party Food

This Easy DIY Tailgate Party Food Tutorial is a bunch of my favorite recipes to help you throw a tailgate party in a breeze! It’s a combo of a quick Herb Yogurt Dip, a sweet and spicy Peach and Avocado Salsa and dark chocolate Coca-Cola Brownies!

Ingredients

For the Coca Cola Brownies:

  • 2 eggs
  • 1/2 cup sugar
  • 1/3 cup Cocoa Powder
  • 1/2 cup Coca-Cola
  • pinch of salt
  • 1/2 cup all-Purpose Flour

For the Yogurt Herb Dip:

  • 1 cup Greek Yogurt
  • 1/4 cup mixed minced fresh herbs ( I used a mix of parsley, thyme and basil)
  • 1 pinch salt
  • 1/2 lemon juiced

For the Avocado Peach Salsa:

  • 2 avocados pitted and diced
  • 2 peaches pitted and diced
  • 1 jalapenos sliced
  • 1/4 teaspoon salt
  • 2 scallions chopped
  • 2 tablespoons minced cilantro
  • 1 lime juiced
  • 1 tablespoon olive oil

Instructions

For the brownies:

  1. Make the brownies first. Preheat the oven to 375 degrees. Line an 8-inch square pan with parchment paper and set aside.
  2. In a large bowl, add in the eggs, sugar and cocoa powder. Use a whisk and whisk the mixture until you see no lumps.
  3. Add in the Cola and whisk, then add in the salt and flour and whisk again.
  4. Pour the brownies batter into the prepared baking sheet and bake for 15-17 mins.

For the dip:

  1. In the meantime, prepare the dips. For the yogurt dip, mix all the ingredients together and taste the salt. Adjust it if you need to.

For the salsa:

  1. For the salsa, mix all the ingredients together and taste for salt and spice level. Add more jalapeños to your taste.

  2. When brownies are ready, remove them and cool them for 10 mins before slicing.
  3. Slice the brownies and serve right away as they are or with vanilla ice cream and chocolate sauce.
  4. Serve some ice cream floats on the side if you like, combine a scoop of your favorite ice cream and our some Sprite on top.
  5. Enjoy! :)

Recipe Notes

  • Plate the Avocado Peach Salsa and the Herb Yogurt Dip with a collection of chips, crackers, and some sliced veggies.
  • Serve my Coca-Cola Brownies with a scoop of ice cream and a drizzle of chocolate sauce.
  • Store leftover brownies at room temperature in an airtight container.
